Fruit of more than a decade of work in the recovery of minority varieties of the Canary Islands, many of which were on the verge of disappearance, allows us to enjoy the sensations of an extensive and extraordinary collection.

Viñátigo Marmajuelo

DO: DOP ISLAS CANARIAS – Tenerife.

Grape Variety: 100 % Marmajuelo

Production: Fermentation in stainless steel at 16ºC

Oenological Parameters: 13% vol; A.T.=6,4 gr H2T/l ; PH=3,3; Az. Red.<4 gr/l

Serving Temperature and Food Pairing: Serve at 9ºC; pair with appetizers, seafood, fish.

TASTING NOTES

Appearance:: Pale yellow, clear and brilliant.

Aroma:: High aromatic intensity, with emphasis on passion fruit and fig tree leaf.

Taste:: Intense, very powerful, persistent and with a very long aftertaste.

Viñátigo Gual

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: 100 % Gual

Production: Fermentation in stainless steel at 16ºC, and aged on its fine lees in the same tank.

Oenological Parameters: 13% vol ; A.T.=6,7 gr H2T/l ; PH=3,3; Az. Red.<4 gr/l

Service and food pairing: Serve at 9ºC; combines with fish in sauce, white meats.

TASTING NOTES

Appearance: Straw-like yellow, clear and brilliant.

Aroma: High aromatic intensity, smoky, jasmine, melon and tropical pineapple.

Taste: Intense, extraordinarily buttery and persistent.

Viñátigo Vijariego Blanco

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: 100 % Vijariego blanco

Production: Fermented in new Allier Oak barrels with capacity for 225 and 350 liters. Aged
on its fine lees with batônage for 6 months.

Oenological Parameters: 13% vol ; A.T.=6,9 gr H2T/l ; PH=3,1; Az. Red.<4 gr/l

Serving Temperature and Food Pairing: Serve at 9ºC; combines with white meats, fish in sauce, cheeses.

TASTING NOTES

Appearance: Straw-like yellow, clear and brilliant.

Aroma: High aromatic intensity, emphasis on the pear and vanilla over the smoky notes characteristic of the barrels.

Taste: Intense, with a marked acidity characteristic of the variety.

Viñátigo Malvasía Afrutado

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: 100 % Malvasía Aromática

Production: Fermentation in stainless steel at 16ºC

Oenological Parameters: 12% vol; A.T.=5,9 gr H2T/l ; PH=3,3; Az. Red.26 gr/l

Serving Temperature and Food Pairing: Serve at 8ºC; combines with appetizers and seafood.

TASTING NOTES

Appearance: Pale yellow, clear and brilliant.

Aroma: High intensity aromas, floral, dried apricots, orange peel and terpenes.

Taste:: Great balance between the residual sugars and the remaining non-fermented sugar, which makes it very appetizing.

Viñátigo Malvasía Clásico

DO: Tenerife- Ycoden Daute Isora

Grape Variety: 100 % Malvasía Aromática

Production: Late harvest. Grapes left on the vine to over-ripen. Fermentation in stainless steel. Aged 3 months in French Oak barrel on lees.

Oenological Parameters: 15% vol; A.T.=5,9 gr H2T/l ; PH=3,6; Az. Red.65  gr/l

Serving Temperature and Food Pairing: Serve at 8ºC; combines well with appetizers, foie gras, cheeses, desserts and digestives.

TASTING NOTES

Appearance: Golden yellow, clear and brilliant.

Aroma: High aromatic intensity, dried apricots, bitter orange peel, floral.

Taste: Very well-balanced and persistent.

Viñátigo Negramoll

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: 100 % Negramoll

Production: Prefermentation cold maceration at 0ºC and subsequent fermentation at 25ºC. Aged 6 months in French Oak barrel.

Oenological Parameters: 13,5% vol; A.T.=5,5 gr H2T/l ; PH=3,7; Az. Red.<2 gr/l

Serving Temperature and Food Pairing: Serve at 12ºC; combines with white and red meats.

TASTING NOTES

Appearance: Deep robe, cherry red.

Aroma: Medium intensity, toffee and red berries.

Taste: Soft and polished tannins, very gentle and pleasant on the palate.

Viñátigo Vijariego Negro

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: Vijariego Negro

Production: Prefermentation cold maceration at 0ºC and subsequent fermentation at 25ºC. Each variety aged independently in French Oak barrels, for an average of 8 months

Oenological Parameters: 14% vol; A.T.=5,5 gr H2T/l ; PH=3,65; Az. Red.<2 gr/l

Serving Temperature and Food Pairing: Serve at 14ºC, combines with red meats, game.

TASTING NOTES

Appearance: Deep ruby robe with violet reflections.

Aroma: High aromatic intensity, violets, dark fruits, dark chocolate and spices.

Taste: Structured and powerful with a great palate. Very intense and persistent.

Viñátigo Tintilla

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: 100 % Tintilla

Production: Prefermentation cold maceration at 0ºC and subsequent fermentation at 25ºC. Aged 18 months in French Oak barrel.

Oenological Parameters: 14% vol; A.T.=5,4 gr H2T/l ; PH=3,8; Az. Red.<2 gr/l

Serving Temperature and Food Pairing: Serve at 14ºC; matches red meats and game.

TASTING NOTES

Appearance:: Deep ruby robe.

Aroma: High aromatic intensity, dark chocolate, dark fruits and tobacco.

Taste: Structured and powerful with very good acidity, guaranteeing a long life.

Viñátigo Baboso Negro

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: 100 % Baboso Negro

Production: Pre-fermentation cold maceration at 0ºC and subsequent fermentation at 25ºC Crianza wine aged for 12 months in French Oak barrels.

Oenological Parameters: 14,5% vol; A.T.=5,3 gr H2T/l ; PH=3,8; Az. Red.<2 gr/l

Serving Temperature and Food Pairing: Serve at 14ºC; combines well with red meats, game and dark chocolate.

TASTING NOTES

Appearance: Deep ruby robe.

Aroma: High aromatic intensity, with nuances of violets and dark fruits.

Taste:: Structured and powerful with a great palate. Very Intense
