From the two most widespread varieties and applying modern production techniques we obtain our wines Viñátigo white, Viñátigo medium-dry, Viñátigo rosé and Viñátigo red.

Viñátigo White

DO: DOP ISLAS CANARIAS – Tenerife.

Grape Variety: Listán blanco

Production: Fermented in stainless steel tanks at 16 ° C.

Oenological parameters: 12,5% vol; A.T.=  5,4 gr H2T/l ; PH= 3,3 ; Az. Red.< 2   gr/l

Serving Temperature and Food Pairing: Serve at 9ºC; combines well with grilled fish.

TASTING NOTES

Appearance: Pale yellow with greenish nuances, translucent and brilliant.

Aroma: Medium intensity with emphasis on fennels and dry fruits.

Taste: Full-bodied, good acidity, long and persistent.

Viñátigo Blanco Medium-Dry

DO: DOP ISLAS CANARIAS

Grape Variety: Listán blanco, Moscatel

Production: Fermented in stainless steel tank at 16 ºC.

Oenological parameters: 12% vol; A.T.= 5,4 gr H2T/l ; PH= 3,3; Az. Red.=18 gr/l

Serving Temperature and Food Pairing: Serves at 8ºC and combines with appetizers, shellfish.

TASTING NOTES

Appearance: Pale yellow with greenish tones, clear and brilliant.

Aroma: Medium-high intensity, emphasis on the fennels characteristic of the Listán Blanco and the terpenes common to the Moscatel (Muscat).

Taste: Balanced with an adequate acidity for the rest of the sugar we find.

Viñátigo Rosé

DO: DOP ISLAS CANARIAS – Tenerife.

Grape Variety: 100% Listán negro

Production: Obtained by saignée following 24 hours of prefermentation cold maceration at 0ºC of the Listán Negro.

Oenological parameters: 12,5% vol; A.T.=5,2 gr H2T/l ; PH=3,4; Az. Red.<2 gr/l

Serving Temperature and Food Pairing: Serve at 9ºC; combines with pastas, rice, sweet & sour foods.

TASTING NOTES

Appearance: Raspberry red with violet nuances, clear and brilliant.

Aroma: Medium high intensity with emphasis on black pepper, strawberry and raspberry.

Taste: Fresh and pleasant, well-balanced.

Viñátigo Red

DO: DOP ISLAS CANARIAS – Tenerife

Grape Variety: Listán negro

Production: Prefermentation cold maceration at 0ªC with saignée for rosé and subsequent fermentation at 25ºC. 3 months aging in French Allier Oak barrel.

Oenological parameters: 13,5% vol; A.T.=  5 gr H2T/l ; PH=3,4 ; Az. Red.<1   gr/l

Serving Temperature and Food Pairing: Serve at 12ºC; matches white and red meats.

TASTING NOTES

Appearance: Medium-high red cherry robe, with violet reflections.

Aroma: Medium intensity, black pepper, dry fig tree leaf and black plum. An underlying, very well-integrated reminiscence of the barrel.

Taste: Medium structure, with soft and very polished tannins.
